Homemade Citrus Oil
For a quick and easy citrus oil, peel 2 inch pieces of zest from a lemon, lime and/or orange. Carefully cut the white pith out, because it’s bitter. Place the zest in a blender with 1 cup of oil and blend on high until the zest is chopped finely. Strain the oil…voila! You’re ready to use this flavored oil as a finishing oil on fish, poultry or beef, or even in a salad dressing.
Keep Your Gazpacho Cool
If you’re serving cold gazpacho on a hot day, there is an easy way to keep it cool in the heat. You can chill some of your gazpacho by freezing the liquid in ice trays. Then put a few cubes in each person’s serving of soup, that way the ice gazpacho will keep the liquid gazpacho cool and refreshing.
Multi-Purpose Kitchen Gadgets
Carla tries not to buy anything that doesn’t have multiple uses. One of her favorite examples is a silicone cube tray. It can be used as an ice tray, a mold for frozen desserts (mini mousse cakes, etc.), as well as, a muffin or biscuit pan. Versatility goes a long way in the kitchen and in your pocketbook.
Quick Dessert: Chocolate Ice Cream Bites
Scoop small balls of ice cream and chill on trays in freezer until firm. Dip in slightly cooled melted chocolate and freeze to set.
The Perfect Chocolate Glaze
Make a shiny glaze for any cake by adding 1 tablespoon vegetable oil to 10oz dark chocolate. Heat chocolate in 30 second intervals in microwave until smooth. Chill the cake before pouring on the glaze.
