Cooking With Herbs
Michael never cooks with dry herbs. He loves to cook with fresh herbs to liven up his food. Sturdier herbs such as, thyme, rosemary, and oregano can be added at the beginning of the cooking process. Whereas soft herbs such as, parsley and basil should be added the end of cooking process once you are off the heat for maximum flavor.
Michael says there are different ways to store fresh herbs. You can keep multiple herbs in potters and grow them all year round in your kitchen window. However, Michael likes to store his fresh herbs in a glass of water with the roots trimmed off the bottom, and covered with a damp paper towel in the fridge. In this situation they can last for 5-6 days at their maximum freshness.
