Add curds to boiling water.
Use wooden paddle to fold curds over each other
Using paddle, pull mozzarella away from body while guiding remainder in bowl with other hand.
Continually work mozzarella until it becomes silky and shiny.
Remove mozzarella from rondeau and stretch to remove knots.
Press mozzarella evenly on counter.
Add prosciutto, basil, red onion, and sundried tomatoes to cheese.
Roll cheese with toppings until it forms a log.
Slice into ½ inch disks before serving.
