Superior Greens: Load Up on These Veggies

We’ve all done it, we buy some greens at the supermarket, and they sit in the fridge and go limp because we’re not quite sure what to make with them.  Today Daphne is here to help with some of her fave veggies.

Escarole

This vegetable is a great source of vitamins and minerals.  In one ½ cup serving you get 65% of your recommended bone-healthy vitamin K.   So, now is the perfect time to add it to your diet.  It may look like romaine, but this bold and bitter green is much more flavorful.

Spinach

Spinach is packed with vision-maintaining vitamin A, iron and fiber – meaning that you should try to eat it whenever possible.  The good thing is it’s a versatile ingredient.  You can use it with your breakfast in an omelet or smoothie, in your lunch in a salad or wrap or even with your dinner as a quick sautéed side.

Kale

Kale really is the M.V.P. of a healthy diet.  It has double the vitamin C of an orange.   Plus, it’s sturdy so it can keep in your crisper for up to ten days.  It really is the undisputed king of greens.
