How do you know if you’re turkey is done?
A turkey cooks approximately 15-20 minutes per pound. So, a 12-14 pound turkey will take between 3 hours and 3 hours and 45 minutes.
About a half hour before the turkey’s finished, take it out of the oven. Insert a meat thermometer into the thickest part of the thigh. It should read 165 degrees Fahrenheit.
If you don’t have a thermometer – you can pierce the turkey with a fork. The juices should run clear, not pink. And the leg should move easily in the joint.
Let the bird rest for about 20 minutes so the juices re-distribute.
