Super Chef's Alex Guarnaschelli and Geoffrey Zakarian's Pork Chops With Pumpkin
  • 1/2 pumpkin peeled and cut into half-moons
  • 1/4 cup parsley
  • 3 gloves garlic
  • 5-6 sage sprigs
  • Olive oil
  • Salt and pepper
  • 1/3 cup Popcorn popped
  • 4 pork chops
  • 3 cloves garlic
  • 4 sprigs thyme
  • 2 tablespoon Butter
  • pinch of salt
  • 1 glove garlic
  • 3 olives
  • 1 tablepoon capers
  • 4 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • 2 anchovies
  • 1 can tuna packed in water drained
  • Salt and pepper
  • Arugula for the plate
  • Add olive oil to pan and cook pumpkin until tender. Add parsley, sage, garlic and salt and pepper to taste.
  • Pop popcorn according to directions.
  • In a pan add butter, garlic, salt and thyme. Put pork chops in pan and saute until slightly pink in the center (about 5 minutes per side). Baste the pork chops with the melted butter and sauce in the pan while cooking.  Once cooked cut pork into strips, against the grain.
  • Put ingredients in a blender and blend until smooth and combined.
  • For plating, lay arugula greens on a plate. Top greens with cooked pork, pumpkin, popcorn and finish with sauce. Garnish with some chopped chives.
