  • 1/2 pumpkin peeled and cut into half-moons
  • 1/4 cup parsley
  • 3 gloves garlic
  • 5-6 sage sprigs
  • Olive oil
  • Salt and pepper
  • 1/3 cup Popcorn popped
  • 4 pork chops
  • 3 cloves garlic
  • 4 sprigs thyme
  • 2 tablespoon Butter
  • pinch of salt
  • 1 glove garlic
  • 3 olives
  • 1 tablepoon capers
  • 4 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • 2 anchovies
  • 1 can tuna packed in water drained
  • Salt and pepper
  • Arugula for the plate

    1/2 pumpkin peeled and cut into half-moons
    1/4 cup parsley
    3 gloves garlic
    5-6 sage sprigs
    Olive oil
    Salt and pepper
    Add olive oil to pan and cook pumpkin until tender. Add parsley, sage, garlic and salt and pepper to taste.

    Pop popcorn according to directions.

    4 pork chops
    3 cloves garlic
    4 sprigs thyme
    2 tablespoon Butter
    pinch of salt
    In a pan add butter, garlic, salt and thyme. Put pork chops in pan and saute until slightly pink in the center (about 5 minutes per side). Baste the pork chops with the melted butter and sauce in the pan while cooking.  Once cooked cut pork into strips, against the grain.

    1 tablepoon capers
    4 tablespoon olive oil
    2 tablespoon red wine vinegar
    2 anchovies
    1 can tuna packed in water drained
    Salt and pepper
    Put ingredients in a blender and blend until smooth and combined.

    Arugula for the plate
    For plating, lay arugula greens on a plate. Top greens with cooked pork, pumpkin, popcorn and finish with sauce. Garnish with some chopped chives.
