Jenny Gibbons' Apple Crumble Cake

  • 8-10 Granny Smith Apples (peeled and sliced 1/4-inch thick)


  • 1/2 pound butter (melted and cooled)
  • 8 tablespoons sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 3 cups flour


  • 2 cups sugar
  • 3 cups flour
  • 2 teaspoons cinnamon
  • 3/4 pound butter (firm and chunked)

  • For the Crust: Preheat oven to 350ºF. Combine the crust ingredients in a food processor and pulse until dough comes together. Remove from work bowl and spread onto a 12x17" baking sheet, completely filling pan.
  • Shingle sliced apples in 3 columns lengthwise, filling the pan completely.
  • For the Crumble: Wipe out work bowl and blade of food processor and place back on machine. Combine the crumble ingredients into machine and pulse to form a coarse crumble. Sprinkle over apples.
  • Bake for 1 hour. Remove from oven and allow to cool for a few minutes before serving. Serve slices of cake with a scoop of vanilla ice cream.
