Bacon Wrapped Pineapple

  • 1 pound bacon
  • 1 pineapple (skin removed, cored and cut in 1-inch cubes)
  • 1 teaspoon paprika
  • 2 limes (juiced)
  • store-bought mango chutney (to serve)
  • toothpicks (to assemble)

  • Preheat oven to 425ºF.
  • Cut bacon strips in half crosswise. Sprinkle pineapple pieces with paprika. Wrap bacon strips around pineapple pieces and pierce with a toothpick to hold. Place on a baking sheet and bake for 15 minutes or until the bacon is crispy.
  • Remove from the oven, drizzle with lime juice and serve with mango chutney.
