Bacon Wrapped Pineapple
- 1 pound bacon
- 1 pineapple (skin removed, cored and cut in 1-inch cubes)
- 1 teaspoon paprika
- 2 limes (juiced)
- store-bought mango chutney (to serve)
- toothpicks (to assemble)
- Preheat oven to 425ºF.
- Cut bacon strips in half crosswise. Sprinkle pineapple pieces with paprika. Wrap bacon strips around pineapple pieces and pierce with a toothpick to hold. Place on a baking sheet and bake for 15 minutes or until the bacon is crispy.
- Remove from the oven, drizzle with lime juice and serve with mango chutney.
