Clinton Kelly's Blackberry Lime Syrup
- 1 cup Dark Brown Sugar
- 1 cup Granulated Sugar
- 1 1/2 cup Water
- 1/4 cup Fresh Lime Juice
- zest of one Lime
- 3/4 cup Blackberries
- Combine sugars, water and lime juice and zest in a medium saucepan. Bring the mixture to a boil over medium heat. Boil, stirring regularly, until the mixture has reduced to roughly 2 cups (about 20 mins.)
- Meanwhile, puree blackberries and transfer to a bowl fitted with a fine mesh strainer. Force the puree through the strainer and discard any seeds.
- Whisk the berries into the syrup and set aside to cool. Place in an airtight jar and refrigerate.
