Clinton Kelly's Blackberry Lime Syrup
- 1 cup Dark Brown Sugar
- 1 cup Granulated Sugar
- 1 1/2 cup Water
- 1/4 cup Lime Juice
- 1 lime (zested)
- 3/4 cup Blackberries
- In a medium saucepan, add the brown sugar, granulated sugar, water, lime juice and lime zest and heat over medium heat. Bring to a boil then reduce to a simmer until the mixture is reduced to 2 cups, about 20 minutes.
- In the carafe of a blender, add the blackberries and blend until smooth. Transfer to a fine mesh strainer set over a bowl. Using a spatula, force the puree through the strainer and discard any seeds.
- Add the strained mixture to the syrup, whisk to combine and set aside to cool.
- Place in an airtight jar and refrigerate.
