  • 4 ounces Robiolina
  • 4 ounces Mascarpone
  • 12 ounces Mortadella (cubed)
  • 1-2 tablespoons Dijon (to taste)
  • 1 bunch Chives (finely chopped; as garnish)
  • Salt
  • freshly ground Pepper
  • Extra Virgin Olive Oil
  • grilled Bread
  • Cornichons
  • Pickled Onions
  • Pickled Peppers

    4 ounces Robiolina
    4 ounces Mascarpone
    12 ounces Mortadella (cubed)
    1-2 tablespoons Dijon (to taste)
    Salt 
    freshly ground Pepper 
    Extra Virgin Olive Oil
    In the bowl of a food processor, combine the robiolina, mascarpone, mortadella, dijon, and a pinch of salt and pepper. Puree, scraping down the sides as necessary. Gradually add just enough extra virgin olive oil and puree to create a spreadable consistency. Adjust seasoning to taste.

    Garnish with chives. Serve with grilled bread, cornichons, pickled onions, and pickled peppers.

    Helpful Tips:
    1. Mortadella vs. Bologna: similar to bologna, mortadella has a bit more flavor and happens to be slightly more expensive. If you can't find mortadella, you can make this dip with bologna.
    2. You can use any kind of soft white cheese, including cream cheese in place of the robiolina.
    3. Scrape sides of the food processor to get all of the ingredients evenly chopped.
