Diane Henderiks' Pomegranate-Lime Vinaigrette

This flavorful vinaigrette will jazz up your salads.
  • 1 tablespoon rice wine vinegar1/4 cup fresh pomegranate juice
  • seeds reserved for salad2 teaspoons lime juice
  • freshly squeezed1 tablespoon honey1 teaspoon Dijon mustard1 teaspoon garlic
  • minced Cash of cayenne pepper1/2 cup olive oilSalt and pepper to taste

    1 tablespoon rice wine vinegar
    1/4 cup fresh pomegranate juice, seeds reserved for salad
    2 teaspoons lime juice, freshly squeezed
    1 tablespoon honey
    1 teaspoon Dijon mustard
    1 teaspoon garlic, minced
    Cash of cayenne pepper
    Whisk first 7 ingredients (vinegar through cayenne) for dressing in a bowl. Let sit for 5-10 minutes to meld flavors.

    1/2 cup olive oil
    Salt and pepper to taste
    Whisk in oil and season to taste with salt and pepper. Set aside.

    Combine ingredients for salad in a large bowl. Add half of the dressing and toss thoroughly.

    Add additional dressing as needed or serve a little extra on the side.
