Geoffrey Zakarian's Flambeed Bananas with Whiskey Vanilla Sauce
Flambeed Bananas Recipe: The combination of warm bananas and cool coconut ice cream offers a well balanced bite.
- 3 Bananas
- 1/2 cup Sugar
- 1/3 cup Maker's Mark Whiskey
- 1/4 cup Soft Butter
- 1 Vanilla Bean (scraped)
- 1 zest of 1 Orange
- Coconut Ice Cream

1/2 cup Sugar
1/4 cup Soft Butter
1/3 cup Maker's Mark Whiskey
Cut the bananas lengthwise and set aside. In a saucepan, melt the sugar to a dry caramel. Once you reach a nice golden brown color, between 2 to 6 minutes, add the butter. Deglaze with whiskey.
1 Vanilla Bean (scraped)
1 zest of 1 Orange
Coconut Ice Cream
Add the vanilla seeds and orange zest, then add the bananas and simmer for about 3 to 5 minutes. Carefully remove the bananas. Set onto a plate and serve warm with ice cream on the side, spoon sauce over top.
1. Though people tend to peel bananas upside down, try peeling them from the bottom.
2. Use fresh vanilla beans for a rich flavor.
