A not-too-sweet gin cocktail with a refreshing hint of grapefruit.
- 1 cup Sugar
- 1 tablespoon Fennel Seed
- 1 1/2 ounces Gin
- Grapefruit Juice
- Club Soda
- Cook sugar, 1 cup water and fennel seed in a small saucepan over medium heat until simmering; remove from heat and cool syrup to room temperature. Pour syrup through fine mesh strainer to remove seeds; discard seeds and set syrup aside.
- Pour gin and 1/2 ounce fennel syrup into an ice-filled 12-ounce glass. Top with splash of grapefruit juice and club soda. Stir briefly.
