  • 2 teaspoons Black Peppercorns
  • 1/2 cup finely minced Shallots
  • 1 cup Red Wine Vinegar
  • 2 tablespoons Red Wine
  • Salt to taste

    2 teaspoons Black Peppercorns
    Grind the peppercorns in a spice grinder. Sift out the larger pieces.

    1/2 cup finely minced Shallots
    1 cup Red Wine Vinegar
    2 tablespoons Red Wine
    Salt to taste
    Combine all the ingredients and let marinate for at least an hour, preferably over night. (Look for oysters that are heavy and unopened. Place the oyster in a towel, with the curved side on the bottom and the flat slide on top. Stick a knife in the crevice to open, and then scrape the top to release the oyster. Top with Mignonette Sauce.)
