A deliciously filling soup!
Michael Symon's Hearty Pork Soup with White Beans and Spinach
- 2 12- ounce can White Beans
2 pound Hearty Spinach (roughly chopped)
1 Onion (chopped)
2 medium Carrots (chopped)
2 stalks Celery (chopped)
1 cup Parsley (chopped)
1 cup Breadcrumbs
Zest of 2 Lemons
1/4 cup Parmigiano-Reggiano
2 Pork Shanks
- Heat the olive oil n a dutch oven over medium-high heat. Add the onions, carrot, and celery, and sweat for 3-4 minutes. Pull the pork and add, mix well. Add the spinach, once it wilts, add the beans and braising liquid. Bring the soup to a simmer and check the seasoning.
- Combine the breadcrumbs, parsley, zest, and parmigiano-reggiano in a food processor and pulse just until mixed.
- Serve in bowl with a topping of the breadcrumb mixture.
