Omelet with Black Truffle and Robiola

Omelet with Black Truffle and Robiola
  • 2 tablspoons butter
  • Oiive oil for the pan
  • 4 eggs
  • 1/4 cup heavy cream
  • 4 slices robiola
  • 2 tablspoons chives
  • 2 tablespoons parsley
  • 7 or shavings of black truffle
  • Heat the butter and a drizzle of olive oil in a nonstick pan. Whisk together the eggs and cream and add to the pan. Stir the eggs until the omelette begins to scramble and then gently spread out the eggs to cover the pan. Fill with the rest of the ingredients and fold over.
