Michael Symon's Grilled Hanger Steak with Salsa Verde

The perfect marinade and salsa Verde for grilled hanger steak!

For your next backyard BBQ, try this tasty marinade on your grilled steak, and serve with a side of salsa Verde and tomatoes.
  • 4 pounds hanger steak
  • 2 cups red wine vinegar5 springs of oregano3 cloves garlic, chopped4 shallots, chopped3 tablespoons coriander4 cups blended oil
  • 4 bunches parsley
  • 4 cloves garlic4 shallots
  • 2 lemons3 cups extra virgin olive oil
  • 1/2 tablespoon chili flakes2 large tomatoes

    4 pounds hanger steak
    Clean hanger steak by taking off silver skin.

    Cut into 8 ounce portions and place in marinade.

    For the marinade:

    2 cups red wine vinegar
    5 springs of oregano
    3 cloves garlic, chopped
    4 shallots, chopped
    3 tablespoons coriander
    4 cups blended oil
    Combine all ingredients and pour over hanger steak.

    Let marinade overnight.

    Grill to desired doneness.  Medium would be about 5 minutes per side.

    Slice against the grain and serve with salsa Verde.

    For the salsa Verde:

    4 bunches parsley
    Wash and dry the parsley.

    4 cloves garlic
    4 shallots
    Rough chop parsley, garlic and shallots.

    2 lemons
    3 cups extra virgin olive oil
    In a large mixing bowl combine juice from lemons and olive oil.  Whisk together.

    1/2 tablespoon chili flakes
    2 large tomatoes
    Add chili flakes and whisk again, toss with tomatoes and serve with hanger steak.
