Try these three versions of this flaky pastry pocket: caramelized onions, mushrooms and onions, short ribs with mushrooms and onions.

  • For the Caramelized Onions:
  • 2 tablespoons Extra Virgin Olive Oil 
  • 2 medium Onions (thinly sliced)
  • Salt and Pepper to taste
  • For the Simple Pie Dough:
  • 1 recipe Michael's Savory Pie Dough 
  • 1 pound Gruyere Cheese (shredded) 
  • 1 Egg plus 1 tablespoon Water whisked
  • Sea Salt for garnish
  • For the Special Mushrooms:
  • 2 tablespoons Extra Virgin Olive Oil 
  • 2 tablespoons Butter 
  • 1 pound Mushrooms (cremini or white button; sliced)
  • 2 Shallots (thinly sliced)
  • 2 Garlic cloves (thinly sliced)
  • 2 fresh Thyme leaves
  • Salt and Pepper to taste 
  • 3 tablespoons Dry White Wine
  • For the Spectacular Short Ribs: 
  • 1/2 pound Braised Short Rib meat (shredded)

    Preheat oven to 375 degrees F.

    2 tablespoons Extra Virgin Olive Oil
    2 medium Onions (thinly sliced) 
    Salt and Pepper to taste
    For the Caramelized Onions: Drizzle two tablespoons of olive oil in the skillet and saute the onions, salt and pepper over low heat for about 20 to 30 minutes, stirring occasionally to prevent browning. Add oil as necessary and deglaze pan with a tablespoon or so of water if brown bits form on the bottom of the skillet. Set aside and let cool.

    1 recipe Michael's Savory Pie Dough 
    For the Simple Pie Dough: Line a sheet tray with parchment paper. On a floured work surface, roll the pie dough out to 1/4-inch thickness. Cut into 6 inch squares.

    1 pound Gruyere Cheese (shredded)
    1 Egg plus 1 tablespoon Water whisked
    In a large mixing bowl combine the caramelized onions and gruyere cheese. Place 1/4 cup of the mixture onto the center of each pie square. Fold over the dough to form a pocket. Seal the edges with egg wash and press together using the tines of a fork.

    Sea Salt for garnish 
    Brush the top with egg wash and sprinkle with sea salt. Place on the prepared baking sheet and repeat with remaining dough and filling. Bake for 15 to 18 minutes or until the dough is golden brown.

    2 tablespoons Extra Virgin Olive Oil
    2 tablespoons Butter 
    1 pound Mushrooms (cremini or white button; sliced)
    For the Special Mushrooms: Heat a large saute pan over medium-high. Add olive oil and butter to the pan and cook until butter melts and bubbles subside. Add the mushrooms and toss to coat in the butter and oil. Season with salt and allow to cook undisturbed for 2 to 3 minutes. Toss and continue to cook so the mushroom get crispy, about 2 to 3 more minutes.

    2 Shallots (thinly sliced) 
    2 Garlic cloves (thinly sliced) 
    2 fresh Thyme leaves
    Salt and Pepper to taste
    3 tablespoons Dry White Wine
    Add the shallots, garlic and thyme and season with salt and pepper. Cook for 2 to 3 minutes just to soften the shallots. Add the wine to deglaze and cook for 2 more minutes or until the wine is reduced by half. Remove from heat and allow to cool. Remove thyme sprigs and discard.

    1/2 pound Braised Short Rib meat (shredded) 
    Add the sauteed mushrooms to the mixture of onions and cheese and make the pockets as directed above.

    For the Spectacular Short Ribs: Add the short rib meat to the mixture of onions and cheese and build the pockets as directed above.
