  • 6 Pork Chops (1-inch thick)
  • Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • Salt
  • freshly cracked Black Pepper
  • For the Cinnamon Spiced Applesauce:
  • 6 Tart Apples (peeled and cut into 1-inch pieces)
  • 1 cup Apple Cider
  • 1 teaspoon freshly grated Cinnamon
  • 3/4 cup Red Cinnamon Candies
  • Salt (to taste)

    1 teaspoon Cumin
    1 teaspoon Paprika
    Salt
    freshly cracked Black Pepper
    6 Pork Chops (1-inch thick)
    Olive Oil
    Heat a grill pan to medium high. Mix the spices in a small bowl and season the pork chops on both sides. Drizzle with olive oil and place on the grill. Cook for 3 to 4 minutes per side until charred and cooked to medium rare. (Pork chops may be finished in a 400 degree F oven if more well done meat is desired.)

    Remove from grill and allow to rest for 10 minutes. Slice the pork chops off of the bone and then into slices and arrange on a platter. Top with some of the spiced apple sauce to serve.

    6 Tart Apples (peeled and cut into 1-inch pieces)
    1 cup Apple Cider
    For the Cinnamon Spiced Applesauce: Place the apples and cider in a medium sauce pot and bring to a boil. Reduce heat to simmer, cover and cook until apples are mostly soft.

    1 teaspoon freshly grated Cinnamon
    3/4 cup Red Cinnamon Candies
    Salt (to taste)
    Remove lid and stir in the remaining ingredients. Cook until candies have melted and dissolved. Adjust seasoning to taste. Remove from heat and allow to cool. Store covered in the fridge for up to a week.
