Chicken Salad with Almonds, Apples, and Dried Cherries

Michael Symon's Pulled Chicken Salad
  • 1 Coriander and Orange Roasted Chicken
  • 1 cup Whole Milk Greek Yogurt
  • 1/2 cup toasted slivered Almonds
  • 1 Granny Smith Apple (small dice)
  • 1/2 cup dried Cherries (lightly topped)
  • 1/4 cup chopped Mint
  • Salt (to taste)
  • Pull the meat off of the roasted chicken and remove the skin. Cut into a medium dice. Mix with the remaining ingredients along with some salt. If desired, serve with your favorite bread.
