Pumpkin Power Bread

  • 1 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 6 tablespoons sugar
  • 1 cup pumpkin puree
  • 1/2 cup coconut oil
  • 2 eggs
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 cup walnuts (chopped)
  • 1 teaspoon ginger
  • 1 teaspoon vanilla extract
  • 6 tablespoon honey

  • Preheat oven to 350F.
  • In a mixing bowl sift together, flour, salt, sugar, baking soda, baking powder and all spices.
  • In a second bowl combine the pumpkin puree, vanilla, honey, coconut oil, and eggs. Mix together the dry and wet ingredients, don't over-mix. Stir in walnuts.
  • Pour batter into buttered loaf pan. Bake for 35-40 minutes. Remove from oven and let cool on a wire rack.
