Mario Batali's Salmorejo

  • 1 pound ripe Tomatoes (cored and coarsely chopped)
  • 2 Garlic cloves (minced)
  • 2 teaspoons Sherry Vinegar
  • 1/4 cup Extra Virgin Olive Oil
  • 2 cups 1/2-inch cubes stale Bread (crusts removed)
  • Kosher Salt
  • 2 large Hard-Boiled Eggs (peeled and finely chopped or pressed through a coarse sieve)
  • 1/4 pound Serrano Ham (finely diced)
step-by-step directions
  • Combine the tomatoes, garlic, vinegar, and olive oil in a blender or food processor and process to a puree. Add the bread in 2 batches and process until very smooth. Add salt to taste. Serve in shallow bowls, garnished with the eggs and ham.
