Crispy Mac and Cheese

Carla Hall's Show Stopping Mac n Cheese
  • 1 1/2 pounds Cavatappi Noodles
  • Kosher Salt
  • 3 tablespoons Butter
  • 3 tablespoons All-Purpose Flour
  • 3 cups Milk
  • 1 pound Sharp Cheddar Cheese (grated)
  • 1/2 cup freshly grated Parmesan Cheese
  • freshly ground Black Pepper
  • Yeast Rolls to serve
  • softened Butter to serve
For the Bread Crumbs:
  • 3 tablespoons Butter
  • 1 tablespoon fresh Thyme leaves
  • 1 cup Bread Crumbs (about 1/4-inch pieces)
  • Salt and freshly ground Black Pepper
  • Bring a large pot of water to a boil and season with salt. Cook the noodles to al dente according to the package instructions. Drain and set aside.
  • In a large pot, melt the butter over medium heat. Whisk in the flour and cook for 2 to 3 minutes until the flour start to take on color, stirring constantly. Whisk in the milk making sure to eliminate any lumps. Cook for 5 minutes over low, stirring occasionally.
  • Stir in the cheese and adjust seasoning to taste. Stir in noodles to coat completely. Serve with a sprinkling of bread crumbs and a side of Yeast Rolls and softened butter.
  • For the Bread Crumbs: Heat a non-stick pan over medium with 3 tablespoons of butter. Add the thyme leaves and allow to cook for about 30 seconds or until fragrant. Toss in the bread crumbs, coating in the butter. Cook for about 2 to 3 minutes, stirring occasionally until golden brown. Remove from heat.
