  • 1 1/2 pounds Cavatappi Noodles
  • Kosher Salt
  • 3 tablespoons Butter
  • 3 tablespoons All-Purpose Flour
  • 3 cups Milk
  • 1 pound Sharp Cheddar Cheese (grated)
  • 1/2 cup freshly grated Parmesan Cheese
  • freshly ground Black Pepper
  • Yeast Rolls to serve
  • softened Butter to serve
  • For the Bread Crumbs:
  • 3 tablespoons Butter
  • 1 tablespoon fresh Thyme leaves
  • 1 cup Bread Crumbs (about 1/4-inch pieces)
  • Salt and freshly ground Black Pepper

    1 1/2 pounds Cavatappi Noodles
    Kosher Salt
    Bring a large pot of water to a boil and season with salt. Cook the noodles to al dente according to the package instructions. Drain and set aside.

    3 tablespoons Butter
    3 tablespoons All-Purpose Flour
    3 cups Milk
    In a large pot, melt the butter over medium heat. Whisk in the flour and cook for 2 to 3 minutes until the flour start to take on color, stirring constantly. Whisk in the milk making sure to eliminate any lumps. Cook for 5 minutes over low, stirring occasionally.

    1 pound Sharp Cheddar Cheese (grated)
    1/2 cup freshly grated Parmesan Cheese
    freshly ground Black Pepper
    Yeast Rolls to serve
    softened Butter to serve
    Stir in the cheese and adjust seasoning to taste. Stir in noodles to coat completely. Serve with a sprinkling of bread crumbs and a side of Yeast Rolls and softened butter.

    1 tablespoon fresh Thyme leaves
    1 cup Bread Crumbs (about 1/4-inch pieces)
    Salt and freshly ground Black Pepper
    For the Bread Crumbs: Heat a non-stick pan over medium with 3 tablespoons of butter. Add the thyme leaves and allow to cook for about 30 seconds or until fragrant. Toss in the bread crumbs, coating in the butter. Cook for about 2 to 3 minutes, stirring occasionally until golden brown. Remove from heat.
