Mario Batali's Sicilian Pizza
  • 1 recipe Pizza Dough (homemade or store bought)
  • 2 cups Premade Pizza Sauce
  • 1 pound Fresh Mozzarella (grated)
  • 2 tablespoons Capers
  • 1/2 cup Sicilian Green Olives (pitted)
  • 1 tablespoon Dried Oregano
  • 1/4 cup tuna packed in oil
  • crush red pepper flakes (to taste)
  • Olive Oil
  • Preheat oven to 500F.
  • Grease a rimmed heavy duty sheetpan with olive oil.
  • On a floured work surface, press the dough out, until it is 1/4-inch to 1/2-inch thick. Transfer to the oiled sheetpan. Press the dough to the edges of the pan. It will probably shrink back, if so, wait 5 minutes, and then press back towards edges, and it should stick.
  • Spread the tomato sauce evenly over the crust, and sprinkle with the mozzarella, capers, olives, tuna, chili flakes and oregano.
  • Bake the pizza for 20 to 25 minutes, until the crush is golden brown. Allow to cool slightly before serving.
