Clinton Kelly's Sour Cream and Onion Dip

  • 2 tablespoon Olive Oil
  • 1 large Yellow Onion (cut into even 1/4-inch thick rings)
  • 1 clove Garlic (minced)
  • 1 1/2 cup Sour Cream
  • 3/4 cup Mayonnaise
  • Kosher Salt
  • Pepper

  • Heat the olive oil in a sauté pan over medium heat. Add the onion, and season with a large pinch of salt, then toss to coat in oil.
  • Arrange the onion into an even layer in the pan, and cook stirring occasionally, but retaining an even layer. Cook until the onions caramelize, about 10-15 minutes. Remove from heat and stir in the garlic.
  • Combine remaining ingredients in a food processor. Add the onions, garlic, and season with black pepper. Pulse until thoroughly combined, then transfer to the refrigerator. Serve chilled.
