Lemon Trifle with Fresh Fruit
Clinton Kelly's Summertime Pavlova Trifle
- 1 cup Lemon Curd
- 1 tablespoon Limoncello
- Strawberries (sliced)
- Peaches (sliced)
- 2 tablespoons Balsamic Vinegar (plus more to garnish)
- 1/3 cup Whipped Cream
- 1 cup Meringues (crumbled)
- fresh Mint to garnish
- In a small bowl stir together the lemon curd and limoncello. In another bowl, combine the fruit and toss with balsamic vinegar.
- Build the trifle in two glasses starting with a layer of the lemon curd then meringues. Top with macerated fruit and repeat the layers. Finish with whipped cream, a drizzle of balsamic and fresh mint to garnish.
