Lemon Trifle with Fresh Fruit

  • 1 cup Lemon Curd
  • 1 tablespoon Limoncello
  • Strawberries (sliced)
  • Peaches (sliced)
  • Raspberries
  • 2 tablespoons Balsamic Vinegar (plus more to garnish)
  • 1/3 cup Whipped Cream
  • 1 cup Meringues (crumbled)
  • fresh Mint to garnish
  • In a small bowl stir together the lemon curd and limoncello. In another bowl, combine the fruit and toss with balsamic vinegar.
  • Build the trifle in two glasses starting with a layer of the lemon curd then meringues. Top with macerated fruit and repeat the layers. Finish with whipped cream, a drizzle of balsamic and fresh mint to garnish.
