Ingredients
Tabouleh Chicken Sandwich
  • 1 Cuban Baquette
  • 1 1/2 cup Tabouleh
  • 1 cup Mayonnaise
  • 1 teaspoon Garlic salt (added to Mayo)
  • 6 Fried Eggs
  • 12 pieces Turkey Bacon
  • 2 Onion (caramelized)
  • 1 can Corn
  • 1 pound Spinach (raw)
  • 6 Chicken Breasts (grilled or roasted)
  • Chicken Seasoning Paste:
  • 1 Garlic Clove
  • 1 teaspoon Salt
  • 2 tablespoons Extra Virgin Olive Oil
  • 1/4 cup Basil
  • 1/4 cup Parsley
Tabouleh:
  • 1/4 cup Bulgar Wheat
  • 1/2 pound Tomatoes (with no seeds)
  • 1 Onion (chopped)
  • 2 Cucumbers (cubed)
  • 1 bunch Parsley (chopped)
  • 3 tablespooons Lime juice
  • 2 tablespoons Extra Virgin Olive Oil
  • 1/4 cup chopped Mint Leaves
  • 1/4 cup chopped Mango
Directions
  • In a mixing bowl combine all ingredients for the chicken seasoning paste: garlic, salt, olive oil, basil and parsley. Rub chicken breasts with seasoned mixture.
  • Grill chicken breasts for 7 minutes per side.
  • Meanwhile make tabouleh. Combine bulgar wheat, tomatoes, onion, cucumber, parsley, lime juice, olive oil, mint leaves and mango in a large mixing bowl and toss to combine.
  • To make sandwich, mix garlic salt with mayo and spread on baguette. Build sandwich with chicken, tabouleh, a fried egg, bacon, caramelized onions, corn and spinach.
