Apple Hand Pies with Greek Yogurt Sauce
- For the Egg Wash: Roll out dough on a floured surface to 1/8-inch thickness and cut into 4-inch squares. Place a heaping tablespoon of filling into the center of each piece of dough. Brush the edges with the egg wash and then fold the dough over to create a rectangle and seal edges with a fork. Using a sharp paring knife, cut vents in the top of each hand pie. Brush the tops of the pies with the egg wash, as well, and then sprinkle with the cinnamon sugar.
- Arrange hand pies on the prepared baking sheet, leaving 2 inches between each pie to ensure even cooking. Bake for 15 minutes, or until crust is golden and crisp.
- For the Yogurt Sauce: Meanwhile, stir together yogurt, cardamom and honey until incorporated. Serve hand pies warm with spiced yogurt.
