Everyone's favorite side
Daphne Oz's Sweet Potatoes
- 1 sweet potato
- 1-2 Tablespoon coconut oil softened
- 1 Tablespoon maple syrup
- 1 Teaspoon freshly grated ginger
- Pinch cinnamon
- Scrub sweet potato, then stab it with a fork several times. Microwave on high for 4 minutes. Turn over, and microwave another 4 minutes (depending on size).
- Split the sweet potato down the middle. Top with coconut oil, allowing the oil to melt. Drizzle with 1 tablespoon of maple syrup, some freshly grated ginger, and a sprinkle of cinnamon.
