Apple Cake with Cream Cheese Frosting

Apple Cake with Cream Cheese Frosting
Cake
  • 3 cups cake flour
  • 1 cup light brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 4 tablespoon butter (softened to room temperature)
  • 1/2 cup canola oil
  • 3 large eggs (at room temperature)
  • 1/2 cup applesauce (at room temperature)
  • 2 teaspoons vanilla extract
  • 1/2 cup yogurt (at room temperature)
Compote
  • 2 tablespoons butter
  • 3 apples (diced)
  • 1/4 cup light brown sugar
  • 1/2 cup orange juice
  • 1/2 teaspoon cinnamon
Cream Cheese Frosting
  • 2 packages cream cheese (softened, 8 ounce packages)
  • 1 stick butter (softened)
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
Directions
  • For the Cake: Preheat oven to 350°F. Prepare 3 9" cake pans by coating with butter, lining with a round of parchment, coating with butter and dusting with flour.
  • It is important all ingredients are at room temperature.
  • In a large mixing bowl, combine flour, light brown sugar, baking powder and salt. Add butter and canola oil.
  • In a medium bowl, combine eggs, applesauce and vanilla. Add to the flour mixture. Stir in yogurt just to incorporate.
  • Divide the batter between the 3 cake pans and bake 15-20 minutes, until cake is golden brown and pulls away from the pan. Cool for 10 minutes then remove from pan and transfer to a rack to cool completely.
  • For Compote: In a small saucepan over medium-high heat, combine butter, apples, brown sugar, orange juice and cinnamon. Simmer 15 minutes until thickened and apples are soft.
  • For Cream Cheese Frosting: Beat cream cheese and butter until creamy and smooth. Slowly add the powdered sugar until well incorporated. Beat in vanilla.
  • To Assemble the Cake: Using a serrated knife, trim the tops of the cakes to make them even. Spread half of the compote mixture on the first cake. Place the second cake on top and repeat with remaining compote. Place the final cake on top. Frost the top and sides with a thin layer and refrigerate for 20 minutes. Complete with remaining frosting over chilled cake.

    Tips
    - Carla's cake batter makes assembling a layer cake easy because the cakes rise just enough for a perfect layer. The result is that you don't have to cut your cakes in half!
