Apple Cider Donut Bread Pudding
  • nonstick cooking spray
  • 12 apple cider donuts (cut into quarters)
  • 8 large eggs
  • 4 cups half and half
  • 1 1/2 tablespoons honey
  • 1 orange (zested)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon Kosher salt
  • confectioners' sugar (for serving)
  • maple syrup (for serving)
  • mixed berries (for serving)
Directions
  • Prepare an 8 x 8 baking dish with nonstick cooking spray.
  • Add the donuts into the bottom of the pan in an even layer.
  • In a medium bowl, combine the eggs, half and half, honey, orange zest, cinnamon, vanilla extract and salt. Whisk to combine. Pour over the donuts, cover with plastic wrap and transfer to the refrigerator to sit overnight.
  • Preheat the oven to 350ºF.
  • Remove the baking dish from the refrigerator and remove the plastic wrap. Place in the oven to bake for 1 hour until golden brown and the custard is set and puffed. Remove from the oven and let cool slightly before serving. Serve with confectioners' sugar, maple syrup, and mixed berries.
