Ingredients
Apple Crumble Stuffed Acorn Squash
  • 2 acorn squash (halved, crosswise, seeds removed)
  • 2 cinnamon sticks
  • 1 teaspoon whole cloves
  • 1 1- inch piece ginger (peeled, thinly sliced)
  • 2 teaspoons Kosher salt
  • 1 cup apple cider
Apple Filling :
  • 3 Gala apples (peeled, 1/2-inch diced)
  • 2 tablespoons unsalted butter (diced, room temperature)
  • 1/4 cup light brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
Oat Crumble :
  • 1/4 cup light brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup rolled oats
  • 4 tablespoons unsalted butter (diced, chilled)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
To Serve :
  • 1 pint vanilla ice cream (optional, to serve)
Directions
  • Preheat oven to 400ºF.
  • Into a roasting pan, add the squash cut side up. Cut a flat surface on the outside of the squash so the halves are able to stand upright without falling over in the roasting pan. Add the cinnamon sticks, cloves, ginger, salt and apple cider to the bottom of the roasting pan.
  • In a medium bowl, add the apples, butter, brown sugar, salt, cinnamon, ginger, and nutmeg. Toss to combine. Spoon the mixture into each squash half. Cover the baking dish with foil and place in the oven for 30 minutes.
  • Remove foil and sprinkle each squash half with the oat crumble. Bake in the oven, uncovered until golden brown and the squash is tender, about 25 minutes. Serve warm.
  • For the Crumble: In a medium bowl, add the brown sugar, flour, oats, butter, salt, cinnamon, ginger, and nutmeg. Using your hands, crumble the mixture together until the butter resembles pea-sized pieces.
  • Tip: This dish could be served as a dessert with vanilla ice cream or served as a side for a fall dinner or at Thanksgiving.
