Baby Mixed Greens with Sweet Potato Croutons and Tarragon Vinaigrette

Ingredients
Tarragon Vinaigrette:
  • 2 tablespoons white wine vinegar
  • 1/2 shallot (peeled, finely minced)
  • 1 teaspoon Dijon mustard
  • 4 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh tarragon (finely chopped)
  • Kosher salt and freshly ground pepper
Sweet Potato Croutons:
  • 1 large sweet potato (peeled, 1/2-inch dice)
  • olive oil spray
  • 2 teaspoons paprika
  • Kosher salt and freshly ground pepper
Mixed Baby Greens Salad:
  • 1 5- ounce package package mixed baby greens
  • 1/4 cup candied pecans (http://abc.go.com/shows/the-chew/recipes/clinton-kelly-candied-walnuts, using pecans)
  • 1/2 cup goat cheese
  • 1/4 cup dried cranberries
  • 1/2 cup tarragon vinaigrette (recipe above)
  • 1 cup sweet potato croutons (recipe above)
Directions
  • For the Tarragon Vinaigrette: In a medium bowl, add vinegar and shallots. Set aside and allow to sit for 5 minutes.
  • Add Dijon to vinegar mixture, slowly drizzle in olive oil in a steady stream, whisking continuously until mixture has emulsified. Season with salt and pepper. Set aside.
  • For the Sweet Potato Croutons: Preheat the oven to 425ºF. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, add sweet potatoes and spray with olive oil. Add paprika and season with salt and pepper and toss to coat.
  • On the prepared baking sheet, spread out the potatoes in an even layer. Bake for 25-30 minutes, tossing halfway through, or until deep golden brown and crispy.
  • Remove from oven and allow to cool slightly.
  • To Assemble: In a large bowl, add mixed baby greens, candied pecans, goat cheese, dried cranberries and dress with vinaigrette. Toss until lightly coated. Top with sweet potato croutons and serve.
  • Tip: Make a large batch of sweet potato croutons and store in the refrigerator for up to 1 week or freeze for up to 1 month!
