BBQ Chili Rubbed Short Ribs
  • 1 1/2 pounds beef short ribs (boneless, sliced 1/4-inch thick)
  • 2 tablespoons kosher salt (plus more)
  • 2 tablespoons coffee beans (ground)
  • 2 tablespoons ancho chili (ground)
  • 2 tablespoons light brown sugar
  • 1 tablespoon black pepper (ground)
  • 4 tablespoons olive oil (divided)
  • 1 fresno chili (thinly sliced)
  • 1 bunch parsley (leaves)
  • 1 tablespoon red wine vinegar
  • 2 cans BUSH'S® Smokehouse Tradition Grillin’ Beans®
  • In a large bowl, add salt, coffee, Ancho chili, brown sugar and pepper, and mix to combine. Season the ribs generously with the coffee-chili rub on all sides. Lightly coat ribs with olive oil.
  • Meanwhile, preheat a grill over medium heat. Add the ribs and grill for 2 to 3 minutes per side, until charred.
  • In a medium bowl, add fresno chilis, parsley, cilantro, sherry vinegar, 2 tablespoons olive oil and a pinch of salt. Toss to combine.
  • Garnish ribs with herb salad. Serve with BUSH'S® Smokehouse Tradition Grillin’ Beans®.
