Chicago-Style Polish Sausage
  • 1 cup rice wine vinegar
  • 1 cup white wine vinegar
  • 1 cup water
  • 2 tablespoons kosher salt
  • 1/4 cup sugar
  • 1 head whole garlic (cut crosswise)
  • 1 tablespoon black peppercorns
  • 1 tablespoon coriander seeds
  • 2 bay leaves
  • 1 pound serrano
  • 3 tablespoons olive oil (divided)
  • 2 tablespoons unsalted butter
  • 2 Spanish onions (sliced 1/4-inch thick)
  • 4 Polish Kielbasa
  • 4 potato roll hot dog buns
  • yellow mustard (to serve)
  • kosher salt and freshly ground pepper (to taste)
Directions
  • For the Pickled Peppers: Pack the sport peppers in a large glass jar.
  • In a small sauce pan combine the vinegars, water, salt, sugar and bring to a gentle boil, whisking to dissolve the salt and sugar. Once dissolved, add the garlic, spices, and bay leaves. Carefully pour the hot mixture over the peppers and let sit at room temperature until cooled.
  • Once the jar of peppers is fully cooled, cover and refrigerate. Allow peppers to pickle for a minimum of two days before consuming.
  • For the Sausage: In a large saute pan over medium heat, add the 2 tablespoons olive oil. Add the onions and cook the onions, stirring occasionally until golden brown and slightly sweet, approximately 20 minutes. Add the butter to the pan an continue to stir until the butter has fully melted, remove the pan from heat and set aside.
  • Preheat a griddle pan over medium-high heat. Once the pan is hot, brush the surface of the pan with the remaining olive oil using a pastry brush. Place the the Kielbasa on the griddle pan, turning every couple of minutes to brown evenly. Remove from pan once Kielbasa are warmed through and "snappy."
  • To assemble: Spread one half of each bun with the yellow mustard. Place one Kielbasa on top of each bun, then top each Kielbasa with the caramelized onions, lettuce and tomato. Garnish each sandwich with one whole pickled pepper.
