Chicken Broccoli Casserole
  • 2 cups leftover chicken (shredded)
  • 2 cups broccoli (blanched)
  • 2 strips bacon (crumbled)
  • 1 cup leftover caramelized onions (diced)
  • 1/4 cup butter
  • 1/4 cup flour
  • 3 cups milk
  • 1/2 teaspoon freshly grated nutmeg
  • 1 pound shredded cheddar cheese
  • 1 cup panko breadcrumbs
  • 3 scallions (chopped)
Directions
  • Melt the butter in a pot over medium heat. Add the bacon and onions and sauté until warm. Add the flour and cook for 2 minutes. Slowly whisk in the milk. Whisk until there are no lumps. Add the grated nutmeg. Bring to a simmer, stirring constantly with a wooden spoon. Simmer until thickened. Remove from heat and whisk in the cheese.
  • Meanwhile, combine the panko and scallions in a bowl. Mix to combine.
  • Add the broccoli and chicken to a casserole dish. Season with salt and pepper and stir to combine. Pour the cheese sauce over and top with the panko breadcrumb topping.
  • Place under the broiler until golden brown.
