Chilled Hot Chocolate with Caramel Sauce by Daphne Oz and Carla Hall
  • For the Hot Chocolate:
  • 4 cups Milk
  • Chocolate (finely grated)
  • 2 tablespoons Sugar
For the Caramel Sauce:
  • 1/2 cup Sugar
  • 1 tablespoon Water
  • 2 tablespoons Butter
  • 3 tablespoons Heavy Cream
  • For the Hot Chocolate: 
  • In one saucepot, heat the milk to a simmer. Whisk in the chocolate and sugar until both have completely dissolved. Pour over ice in a heat-proof glass.
  • For the Caramel Sauce: 
  • In a thick-bottomed saucepot combine the sugar and water over medium heat. Cook undisturbed until the sugar melts and begins to caramelize, then carefully add the butter and whisk vigorously until combined. Remove from heat for a moment, and then count to 3 before adding the cream. Carefully whisk together, as the mixture will foam considerably.
  • Drizzle caramel sauce over the hot chocolate and serve.
