Ingredients
Flourless Chocolate Cake
  • 6 ounces semisweet chocolate (chips or bar)
  • 1/4 cup maple syrup
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder (non-alkalized)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon Kosher salt
  • olive oil spray
  • fresh berries for garnish
Directions
  • Preheat oven to 350ºF.
  • Lightly spray a 7-inch tart pan with a removable bottom. Line bottom of pan with parchment paper and spray the paper.
  • In a small saucepan, melt chocolate and maple syrup together over low heat. Once melted, add sugar and stir until dissolved, about 2 minutes. Take the saucepan off the heat and whisk in eggs one at a time. Sift the cocoa powder with a sieve and whisk into the pot until there are no lumps. Add in vanilla and salt, mix well.
  • Pour batter into prepared pan and bake until firm to the touch, about 25 minutes.
  • Transfer pan to a cooling rack and let rest at least 5 minutes before slicing.
  • Cut the cake into 8 slices, garnish with fresh berries, and serve warm or at room temperature.
