Fried Inside-Out Cake Balls
  • 1 can store-bought chocolate icing
  • 1 box yellow cake mix
  • 1 cup flour
  • canola oil (for frying)
  • Cake Glaze:
  • 1 cup powdered sugar
  • 2 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon Kosher salt
  • confetti sprinkles (to garnish)
Directions
  • Line a separate baking sheet with parchment paper.
  • Spread the icing into a thin layer on a small baking sheet. Cover with plastic wrap and freeze until set, about 1 hour.
  • Meanwhile, preheat 2-3 inches of oil in a Dutch oven to 350ºF. Line a baking sheet with paper towels.
  • Prepare the cake mix according to package instructions in a large bowl. Add the flour to create a thicker batter. Using a round teaspoon measuring spoon dipped in the hot oil, scoop the ganache mixture into small balls and place on a baking sheet. Using a 1 3/4-inch ice cream scoop, scoop the cake batter and press the ganache ball into the center being sure to cover completely. Drop the ganache balls into the fryer to cook until golden brown, about 3-4 minutes. Remove from the fryer to the paper towel-lined baking sheet. Drizzle a spoonful of glaze on each cake ball and garnish with confetti sprinkles.
  • For the Glaze: In a medium bowl add the powdered sugar, milk, vanilla extract and salt and whisk until combined.
  • Tip: Make the ganache and form into balls in advance and store in the freezer until ready to fry and serve.
