Goat Cheese & Almond Endive Cups

These bite-sized snacks are a great party appetizer!

Goat Cheese & Almond Endive Cups
  • 1/3 cup marcona almonds (chopped)
  • 1/4 cup golden raisins
  • 1 tablespoon dried currants
  • 3 tablespoons chives (chopped)
  • 1/4 cup olive oil
  • 1 log goat cheese (4 ounces, softened)
  • 2 tablespoons thyme (leaves only, chopped)
  • 3 endives (leaves removed and washed)
  • 3 tablespoons honey
  • In a small bowl add the almonds, golden raisins, currants, chives, olive oil and season with kosher salt and freshly ground black pepper.
  • In another small bowl add the goat cheese and thyme and mix to combine.
  • On the end of each endive leaf, add a small spoonful of goat cheese, top with almond mixture and drizzle with honey.
