  • 1
Prepare enough coals for a medium-hot fire. When the coals are ready, arrange them so one side of the fire is hot and one side medium. Or, set gas grill to medium-high on one side and medium-low on the other.
  • 2
    8 large Eggs
1/2 cup grated Pepper Jack or Monterey Jack Cheese
4 ounce can chopped Green Chilies
Meanwhile, beat the eggs in a bowl along with the Cheese and Chilies.
  • 3
    1 pound Center-Sliced Cooked Ham
Grill the Ham Steak, turning once, until heated through, 6 to 8 minutes.
  • 4
1 tablespoon Butter or Vegetable Oil
While the Ham is cooking, place a skillet, preferably cast iron, on the hot part of the grill. Add the Butter or Oil and the Egg mixture, stirring continuously until the Eggs are cooked through.
  • 5
    1 1/2 cups Tomatilla Salsa
    Sour Cream for serving; optional
Cut the Ham into 4 pieces and serve with the Eggs. Top each serving with a few tablespoons of Tomatillo Salsa and a dollop of Sour Cream, if desired.
