Grown-Up Grapefruit Popsicles
  • 3 cups fresh grapefruit juice
  • 1/2 cup rose water syrup
  • 1/4 cup triple sec
  • 1/2 teaspoon cayenne
  • 1 pinch salt
  • Rose Water Syrup
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tablespoon rose water
  • 1 tablespoon ancho chili powder
  • 2 tablespoons sugar
  • 2 tablespoons kosher salt
To Serve
  • white tequila (chilled)
  • seltzer (chilled)
Directions
  • In a large measuring cup or bowl, add grapefruit juice, rose water syrup, triple sec, cayenne and a pinch of salt. Whisk to combine and dissolve salt. Pour into 3-ounce paper cups. Place cups on a rimmed baking sheet. Freeze popsicles overnight. Add popsicle sticks into cups when mixture becomes slushy, about an hour.
  • For the Rose Water Syrup: make a simple syrup. In a medium saucepan, add the sugar, water and rose water, and bring to a simmer, stirring to dissolve. Remove from heat and let cool to room temperature. At this point you can store the syrup in an airtight container in the refrigerator.
  • To serve, fill a rocks glass with a shot of tequila and seltzer. In a small bowl, add the chili powder, salt and sugar, and mix to combine. Remove a popsicle from the cup. Dip popsicle in the chili seasoning. Place the popsicle in the cocktail and let it melt to make a grapefruit margarita!
  • Tips:
    - Dampen the rim of the cocktail glass with grapefruit juice, then coat with the chili seasoning!
    - If not using fresh grapefruit juice, or want to eliminate some of the sugar, cut down on the syrup and triple sec.
