Lightened Up Caesar and Blue Cheese Dressing with Spring Lettuces

Caesar Dressing:
  • 1 clove garlic (peeled and minced)
  • 1 lemon (juiced)
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon anchovy paste
  • 1/4 cup olive oil
  • kosher salt and freshly ground pepper (to taste)
Blue Cheese Dressing:
  • 1/2 cup Greek yogurt
  • 1/2 lemon (juiced)
  • 1 tablespoon mayonnaise
  • 2 tablespoons milk
  • 1/4 cup blue cheese (crumbled)
  • kosher salt and freshly ground pepper (to taste)
  • For Caesar Dressing: In a medium bowl, combine garlic, lemon, worcestershire, anchovy paste and mix well. Slowly drizzle the olive oil into the bowl while whisking continuously. Season with salt and pepper to taste.
  • For Blue Cheese Dressing: In a medium bowl, combine greek yogurt, lemon juice, mayonnaise and milk. Fold in the blue cheese crumbles. Season with salt and pepper.
  • Tip: Use seasonal spring lettuces in your salad to make these dressings pop!
