For the Cupcakes:
  • 1 box store-bought white cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large egg whites
  • gel food coloring (purple, green, yellow)
For the Cream Cheese Frosting:
  • 1 (8-ounce) block cream cheese (room temperature)
  • 1 and 1/2 sticks unsalted butter (room temperature)
  • 1/2 teaspoon vanilla extract
  • 1/2 pound confectioners' sugar (sifted)
  • a pinch of salt
  • gel food coloring (purple, green, yellow)
  • For the Cupcakes: Preheat the oven to 350ºF. Line two 6-cup cupcake tins with cupcake liners.
  • In a large glass bowl combine the cake mix, water, oil and egg whites, mix to combine. Divide the batter evenly between 3 bowls. Using the gel food coloring, color one bowl purple, one bowl green and the remaining bowl yellow. Using a 2 tablespoon ice cream scoop, add one scoop each of the purple, green and yellow colored cake into one cupcake liner. Repeat with remaining liners. Transfer to the oven and bake for 18-20 minutes until set. Remove from oven and let cool for 10 minutes in the cupcake tin then transfer to a wire rack to cool completely.
  • For the Frosting: In the bowl of a stand mixer fitted with the paddle attachment, combine the cream cheese, butter and vanilla. Slowly add in the confectioners’ sugar and salt, mix until smooth. Divide into three separate bowls and using the gel food coloring, color one bowl purple, one bowl green and the remaining bowl yellow. Transfer into three separate piping bags. Add the three piping bags with the ends clipped into a separate fourth piping bag fitted with a large star tip. Set aside until ready to use.
  • To Assemble: Once the cupcakes are cool, decorate with the cream cheese frosting. Serve immediately.
