These mini grilled cheese sandwiches are perfect finger foods for your next party!

Ingredients
Mini Grilled Cheese with Fontina and OTTO Black Truffle Honey
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon grated horseradish (drained)
  • 6 slices good white sandwich bread
  • 1/4 pound fontina cheese (sliced approximately 1/8-inch thick)
  • 2 tablespoons unsalted butter (melted)
  • black truffle honey
  • salt and pepper (to taste)
Directions
  • In a small bowl, stir together the mayonnaise, mustard, and horseradish. Season with salt and pepper.
  • Spread out 3 slices of the bread on a board and thinly smear with the mayonnaise-mustard mixture.
  • Top each of the 3 bread slices with 3 slices of cheese, then add a pinch of salt and pepper. Close with the remaining 3 slices of bread.
  • Brush the top pieces of bread lightly with the melted butter and place buttered side down in a nonstick sauté pan over low heat. While the buttered side is slowly browning, lightly brush the top portion of the bread with butter.
  • Once the underside is golden brown, carefully flip over to cook and brown the other side. Remove from the pan and cut each sandwich diagonally from corner to corner, creating 4 triangles, then cut each triangle in half to give you 8 mini triangles per sandwich.
  • Place on a serving tray and drizzle with the OTTO Black Truffle Honey. Serve immediately or pass as a small bite.
  • Helpful Tips:
    - Serve with Mario's Rustic Tomato Soup.
    - Use regular honey instead!
