Ingredients
Mini Pistachio Cheese Balls
  • 1 (10 ounce) log goat cheese (softened)
  • 1/2 cup pitted dates (finely chopped)
  • 1 tablespoon fresh thyme (finely chopped)
  • 2 cups shelled pistachios (finely chopped, to roll)
  • whole wheat crackers (to serve)
Directions
  • In a large bowl, add goat cheese, dates and thyme and mix to combine. Season with salt and pepper. Form into 20 1-inch balls, roll in pistachios and place on a baking sheet. Refrigerate for 1 hour.
  • Serve with whole wheat crackers.
  • Tips:
    - Cheese balls are a great snack to make ahead of time when hosting a cocktail party!
    - Use your favorite nuts and dried fruit to create your own cheeseball!
