Naan Veggie Panini

Naan Veggie Panini
  • Naan
  • 1 package Active Dry Yeast (.75oz)
  • 1 cup Warm Water
  • 2 tablespoons Organic Cane Sugar
  • 3/8 cups Non-Dairy Milk; such as Soy Milk
  • 1 1/2 teaspoons Kosher Salt
  • 2-4 cups Bread Flour
  • 2 tablespoons Olive Oil
  • For the Panini
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 Orange Bell Pepper
  • 1 Sweet Onion
  • 2 Portobello Mushrooms
  • 8 ounces Arugula
  • 4 slices Pepperjack Cheese
  • 2 tablespoons Pesto Sauce
  • 2 tablespoons Honey Mustard
  • 2 tablespoons Olive Oil
  • For the Naan:
  • In a large glass bowl, dissolve the Yeast in warm water.  Let stand 10-15 minutes or until frothy.
  • Stir in the Sugar, Non-Dairy Milk and enough of the Flour to form a soft Dough. Roughly 2-3 cups.
  • Knead for 8-10 minutes on a lightly Floured surface or smooth surface.  Place in a well-oiled bowl and cover with a damp cloth and let it rise for 1 hour. Until doubled in size.
  • Punch down the Dough and roll it into palm sized pieces and place on a greased baking sheet. Cover with a cloth and let it rise for 30 minutes.
  • Preheat a non-stick pan to high heat and mist lightly with Non-Stick Spray.  Roll each ball into a circle about 1/2-inch thick and a 6-inch diameter circle. Add one at a time to the pan.  Cook 2-3 minutes or until bubbles begin to appear and flip.  Cook on the opposite side for 30 seconds to 1 minute.
  • Brush one side lightly with Olive Oil or Butter.
  • Set Naan aside.
  • For the Panini:
  • Heat a sauté pan over medium-high heat. Add a few tablespoons of light Olive Oil and add the Peppers and Onions, cooking until slightly softened but not translucent. Add the Mushrooms and cook another 2 minutes, and then set aside.
  • Heat up the Panini grill.
  • On the Naan, spread the Pesto on one piece and Honey Mustard on the other.  Add the sautéed vegetables on one side along with Arugula and top with Cheese.  Top with the other piece of Naan.
  • Once the Panini grill is ready, put the sandwich on the grill and close, grilling for 1-2 minutes.  Take it out, slice in half and enjoy!
