Ooey Gooey Butter Cake
  • 1 stick unsalted butter (softened, plus 1 tablespoon to grease)
  • 2 1/4 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup dark brown sugar
  • 1/2 cup sugar
  • 1 large egg (plus 1 egg yolk)
  • 1 teaspoon vanilla extract
Topping:
  • 1 block cream cheese (softened, 8 ounces)
  • 3 1/2 cups confectioners' sugar (plus additional to dust the top)
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
Directions
  • Preheat the oven to 350ºF. Grease a 9x13-inch baking dish with butter.
  • In a large bowl add the flour, baking powder and salt and whisk until combined.
  • In the bowl of a stand mixer add the butter, dark brown sugar and sugar and mix until light and fluffy, about 4 minutes. Add the egg, egg yolk and vanilla and mix until incorporated. Add the flour mixture and mix until just combined. Remove the mixture to the baking dish and press into the pan until smooth.
  • In a medium bowl, add the cream cheese, confectioners' sugar, eggs, salt and vanilla and mix to combine. Pour the mixture over the batter. Bake for 40-45 minutes or until golden brown on top and cooked through. Remove from the oven and allow to cool completely. Dust with powdered sugar.
  • Tip: Try adding 2 tablespoons of cocoa powder to the base of the gooey bars for a chocolate version of this recipe!
