Prosciutto & Spinach Monte Cristos
  • 1 tablespoon olive oil
  • 2 breakfast sausage patties (4-6 ounces each)
  • 6-8 ounces baby spinach
  • 3 eggs
  • 2 tablespoons cream
  • 1 pinch red pepper flakes
  • 1 bunch scallions (thinly sliced, divided)
  • 1/2 teaspoon nutmeg (freshly grated)
  • 4 slices challah bread (1-inch thick slices)
  • 1/4 pound prosciutto (thinly sliced)
  • 1/4 pound salami (sliced)
  • 1 cup cheddar cheese (shredded, divided)
  • 2 fried eggs
  • 1/4 cup parmesan cheese
  • 1 bunch cilantro leaves (chopped)
  • powdered sugar (to serve)
Directions
  • Place a large nonstick pan or skillet over medium-high heat. Add a drizzle of olive oil and the sausage patties. Cook for 3-4 minutes on both sides, until golden brown on the outsides and cooked through in the middle. Remove and set aside.
  • In the same pan, add the spinach and season with salt and pepper. Sauté until wilted. Remove from heat and set aside.
  • In a baking dish or shallow bowl, add eggs, cream, red pepper flakes, scallions and nutmeg. Whisk to combine.
  • Build two sandwiches. In between 2 pieces of challah bread, layer a couple pieces of prosciutto, a couple pieces of salami, some sautéed spinach, cheese and a sausage patty. Dip the sandwiches in the egg mixture.
  • Place a large nonstick pan or skillet over medium heat. Add the sandwiches and cook until golden brown on both sides. Remove sandwiches. Top each sandwich with a fried egg, Parmesan cheese, scallions, cilantro and a sprinkling of powdered sugar. Cut in half and serve.
