Rosti with Smoked Salmon and Mixed Greens

Ingredients
For the Rosti:
  • 1 bag frozen hash browns (30-ounces, thawed)
  • 6 tablespoons butter (divided)
  • Kosher salt and freshly ground black pepper (to taste)
For the Lemon Dressing:
  • 1 lemon (zested and juiced)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh dill (fronds only, chopped)
  • 1 small shallot (peeled, minced)
  • 3 tablespoons olive oil
  • Kosher salt and freshly ground black pepper (to taste)
For Serving:
  • 1 cup Greek yogurt
  • 1 package smoked salmon
  • 3 cups mixed greens
Directions
  • For the Rosti: Heat a large non-stick skillet over medium heat and add 3 tablespoons of butter. Add the hash browns to a large bowl and season with salt and pepper, toss to combine. Add the hash browns to the pan and with a spatula, shape the hash browns into a disk. Cook until the bottom of the disk is golden brown, about 15 minutes. Slide the disk onto a plate and place another plate, upside down, on top of the hash brown and invert. Slide the hash brown, golden brown-side up, back into the skillet. Add the remaining butter to the sides of the pan, allowing it to melt and spread underneath the hash brown evenly. Cook until the bottom side is golden brown, about 15 minutes, and remove to a plate to cool.
  • For the Lemon Dressing: In a medium bowl add the lemon zest and juice, Dijon, dill and shallot. Slowly drizzle in the olive oil, whisking to combine. Season with salt and pepper. Set aside until ready to use.
  • To Serve: In a large bowl toss the mixed greens with the lemon dressing. Season with Kosher salt and freshly ground black pepper. Set aside.
  • Top the rosti with the Greek yogurt leaving a 1-inch boarder. Place overlapping pieces of smoked salmon on top of the Greek yogurt and top with the dressed mixed greens. Slice into wedges and serve.
  • Tip: If hosting a party, make the rosti up to an hour in advance and keep warm in a 200ºF oven. Assemble a toppings bar for guests to customize their rosti!
